Our Kitchen is Based on Time

    Engagement and Commitment.

Ricard Camarena’s approach is largely sustained on local tradition, punctuated with cosmopolitan influences. Respectful with the locally sourced produce, his fresh yet acidic concept is all about searching for the essence of each ingredient. Ricard has created a highly personal cuisine whose simple appearance belies the complex process behind it. His elegant gastronomy uses innovative techniques that, while going largely unseen, can be perceived on the palate. All produce is freshly sourced from the farmland surrounding Valencia and the nearby Mediterranean Sea. He uses this produce creatively without any superfluous elements that might get in the way of what he wishes to convey in each of his dishes. In short, veneration for fresh produce coupled with a commitment to taste.

After graduating he decided to lease the restaurant at the swimming pool in Barx, a small town with a population of one thousand people near Gandia (Valencia). This is where he started to forge his own style, experimenting with traditional recipes from Valencia and its fresh local produce.
